Macadamia Nut Brittle Recipe

Ingredients

• 1 cup granulated sugar

• ¼ cup water

• ¼ cup light corn syrup

• 1½ cups chopped macadamia nuts (a 6-ounce jar is usually enough)

• 1 tablespoon butter

• ¼ teaspoon baking soda

• Sea salt (optional, for sprinkling)

Instructions

1. Prepare the pan: Lightly butter a large baking sheet and set aside.

2. Make the syrup: In a large nonstick saucepan, combine the sugar, water, and corn syrup. Cook over medium-high heat, stirring occasionally, until the mixture turns a golden caramel color.

3. Add the nuts: Stir in the chopped macadamia nuts and continue cooking, stirring constantly, until the mixture deepens to a medium brown. Be careful — it can burn quickly at this stage!

4. Finish the brittle: Remove the pan from heat. Immediately stir in the butter and baking soda (the mixture will foam slightly). Quickly pour it onto the prepared baking sheet and spread it out. Sprinkle with a pinch of sea salt if you like.

5. Cool and break: Let the brittle cool completely on a wire rack. Once set, break it into pieces and store in an airtight container.
