Lilikoi Butter

Lilikoi Butter (Yields: 2 Cups)

A classic island delight—tart, slightly sweet, and luxuriously smooth. This vibrant yellow lilikoi (passion fruit) butter is perfect on toast, pancakes, tarts, or swirled into cheesecake. Just 20 minutes to tropical bliss!

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients

  • 4 eggs

  • 1 cup granulated sugar

  • ½ cup lilikoi (passion fruit) juice

  • 6 tablespoons unsalted butter, cubed

Instructions

  1. Set up a double boiler by placing a heatproof bowl over a pot of simmering water (ensure the bowl doesn’t touch the water).

  2. Add eggs and sugar to the bowl, whisking until well combined.

  3. Stir in the lilikoi juice.

  4. Add the cubed butter and continue stirring constantly.

  5. Cook for 10–15 minutes, or until the mixture thickens enough to coat the back of a spoon.

  6. Pour into sterilized jars and seal with lids. Let cool to room temperature, then refrigerate.
